Baking is more than following a recipe—it’s about making it your own. For me, cheesecake has always been a favorite: rich, creamy, and kissed with a subtle tang. Growing up Filipino, I’ve cherished the taste of halaya (ube), with its velvety sweetness and vibrant purple hue. So I brought the two together, creating a dessert that’s both familiar and new. The result is an Ube Cheesecake that’s spectacularly unique, a fusion of cultures and flavors that tells my story in every bite.


This Ube Cheesecake begins with a graham cracker crust enhanced by sweet coconut flakes. The filling combines silky cream cheese with freshly made halaya (ube), condensed milk in place of white sugar, eggs, and a touch of ube extract. The result is a dessert that’s creamy, vibrant, and uniquely Filipino, yet rooted in a timeless classic.
